
Finding Raw Food
Many people write and tell us they can not find "raw food" where they live. It's true it's easier to find in certain areas. If you live in a major city it's very easy to find raw food restaurants and whole food stores for organic produce. Also, every city seems to have a Chinatown or Thai market where you can find young coconuts. The good news is that raw food is gaining in popularity and it will get easier to find in your area.
More good news! You probably have more ready access to live food then you think! Any health food market which carries raw organic produce (veggies, lettuce, fresh fruits) are a great source. Most also have raw nuts, dried fruits and seeds, sprouts and seaweed products. If you don't see something you need, ask the manager of the store if to order it for you. In most cases they probably can. You can also search the internet and find not easy to find organic raw food products. Check out www.rawfood.com for raw food sources. Many recipes can be obtained over the internet. It is helpful to get some raw food cookbooks for inspiration when starting out. "Living on Live Food" by Alissa Cohen has lots of recipies and good information for raw food novices. Many recipes will call for a dehydrator and a food processer but there are plenty for starting out that require no more equipment then a good chopping knife and a blender.
Here is a pretty basic salad recipe. Please feel free to subsitute any ingredients with your favorites and get creative! You can substitute some of the lettuce (or the kale) with arugula or watercress, etc. I myself leave out the kale since my stomach is too sensitive for certain greens. But if you can eat them - toss them in! They are super healthy and loaded with minerals!
Skyblue Ana Salad
1 avocado (chopped)
1 tomato (chopped)
1 cucumber (unpeeled and diced fine)
1/2 red bell pepper ( diced fine)
1 cup romaine lettuce chopped
6 stalks kale(or your favorite raw green)
1/4 cup organic blueberries
Toss everything together.
Dressing
1 lemon (juice only)
1 tsp raw honey(or 1 date or 1 fig)
2 tbs. olive oil
1 tsp. hemp seed oil
1/4 cup raw sesame seeds
Blend everything except sesame seeds until smooth. You may adjust to taste and even add a little celtic sea salt if you like. Pour over the salad and let it sit for up to 30 minutes at room temperature. The flavor will be even better. Sprinkle with blueberries, and sesame seeds before serving for extra anti-oxidants and crunch!
